Today I was in the mood for Chocolate Peanut Butter Ritz cookies. Remember those?
The yummy buttery tasting Ritz crackers filled with peanut butter then dipped in chocolate? Yes, they’re so AMAZING!
I had to have it! I needed something with peanut butter!
If you’re like me, try these, they’re so good! You can also try my easy peanut butter cookies to tame that craving, too!
I used to eat them all the time growing up. These sandwich cookies are a big hit during Christmas time.
The nice thing is, you don’t have to eat them at just Christmas time. You can make and have them whenever you want!
It’s easy to make them and only require three ingredients! Well, four if you want to go all out and top it with pure madness! Such as pecans, like I did. Or, add some sea salt, almonds, or whatever gets your tastebuds brewing!
Without further ado, are you ready to get started making these No-Bake Chocolate Peanut Butter Ritz Cookies?

NO BAKE CHOCOLATE PEANUT BUTTER RITZ COOKIES
INGREDIENTS
- 1 16 oz. Chocolate Chips unsweetened or semi-sweet
- 1 Cup Peanut Butter
- 40 Ritz Crackers
- * optional Toppings
STEP 1-4
STEP 1: Gather and prep all of the ingredients.
STEP 2: On a cookie Tray, wax paper or kitchen plate, line up 20 single Ritz crackers.
STEP 3: Top each Ritz cracker with 2 teaspoons to 1 tablespoon of peanut butter.
I prefer a lot of peanut butter! I also used a bakers tip and bag, it was way easier! No mess!
STEP 4: Place the second crackers onto the peanut butter and gently press to form a sandwich.
STEP 5-6
STEP 5: Dip each cookie into the chocolate, using two forks to drain the excess chocolate off the cookies. Place the coated cookies back onto the lined baking sheet. Top with your favorite toppings, or not!
I melted the chocolate by heating 1/2 cup of water in a medium sauce-pan on low. Then I placed a heat resistance mixing bowl inside the pan.
Then I dropped in the chocolate chips into the bowl and continuously stirred until the chocolate was all melted. After the chocolate was melted I turned the heat way down to the lowest setting and made sure the chocolate didn’t overcook.
Usually one would use a double boiler but I didn’t have one. So, I just DIY’s it and it worked perfectly!
STEP 6: Set aside for the chocolate to dry on the countertop or you may chill the chocolate peanut butter Ritz cookies in the refrigerator for at least an hour or until firm.
Store in a food-safe container or plastic baggie.
It’s up to you if you want to refrigerate them. For me, I choose not to refrigerate. I prefer room temperature cookies!
Either way, they’re so delish!

- Dip each cookie into the chocolate, using two forks to drain the excess chocolate off the cookies. Place the coated cookies back onto the lined baking sheet.
- Let them air dry until the chocolate hardens or place the chocolate-coated cookies in the refrigerator until firm [at least an hour]. Transfer the air-dried or chilled cookies to an airtight container and store in the refrigerator. Enjoy!
