Pancit is a type of Filipino cuisine. Pancit is noodles that are thin rice vermicelli and sometimes called rice stick noodles. They are delicate and light.
The first time I learned about and tasted this dish was when an associate of mine I work with brought this dish to our pot luck lunch.
It was fabulous, I loved it and wanted to create a recipe to duplicate it, using my own ingredients!
The recipe I created to duplicate my associate’s pancit may not be the most authentic Filipino Bihon Pancit recipe, but I feel it is pretty darn close!
There are so many ways to create the perfect Bihon pancit meal. You can make Bihon Pancit with any meat you choose. Such as chicken, beef, pork, and shrimp.
If meat isn’t your thing, no worries. You can make the pancit alone or add your favorite vegetables. Whichever ingredients you add to the pancit, it’s going to be fabulous!
My favorite ingredients with this Filipino Bihon Pancit are chicken, shrimp, and a mix of vegetables. 🙂

HOW TO MAKE BIHON PANCIT
I’m going to show you how I made my Pancit recipe Step by Step.
Let’s Get Started!
In my recipe, I packed in vegetables, chicken, homemade chicken broth, and simple seasonings. If you don’t wish to use store-bought chicken stock, you can check out my chicken broth recipe here.
To prep and make this recipe, it took about 35-45 minutes.
INGREDIENTS
- Large Thinly sliced Boneless Chicken Breast
- 1 Cup Diced Baby Carrots
- ½ Cup Chopped Bell Pepper
- 1 Cup Chopped Celery
- 6 Sugar Snap Peas
- 1 Cup Chopped Zucchini
- 1/3 Cup Chopped Cabbage
- 1 Small Yellow Onion
- 1 TBSP Garlic Pre-minced in a jar
- 1 Lemon
- 1 TBSP Soy Sauce
- 2 TBSP Olive Oil
- 1 tsp Natures Seasons Seasoning Blend
- ¼ tsp Garlic Powder
- ½ tsp Onion Powder
- ¼ tsp Black Pepper
- 2 Cups Chicken Broth [more if needed]
STEPS 1-4 BIHON PANCIT
STEP 1A:
The first thing you want to do is prep all of your ingredients.
- Chop your carrots, zucchini, bell pepper, cabbage, onion, and celery and set aside. I use the pre-minced garlic in a jar.
STEP 1B: Prepare the Bihon Pancit. This is what the Bihon Package looks like that I used. It can be purchased at some local grocers or Asian or Filipino Markets.
There are two ways you can prepare the pancit.
You can place 1 1/2 blocks of Bihon Pancit in a large bowl with warm water, and let it sit for 10 minutes, or until the pancit is tender.
Rake the pancit with two forks to pull apart. Drain and set aside.
You can place 1 1/2 blocks of Bihon Pancit in a saucepan with water or chicken broth, and bring to a light boil for 8 minutes.

STEP 2:
Now, thinly slice your chicken breast. Notice in the image above, how thin the chicken should be sliced.
STEP 3:
Heat sauté pan or fry pan to medium-high, add oil and heat for 1 minute, then add onions and garlic, sauté until translucent, for about 3 minutes.
STEPS 4-6 BIHON PANCIT
STEP 4:
Place the chicken in the pan, cook, and continuously stir until the chicken is no longer pink, for about 6-7 minutes.
Lower the heat to medium, and add Natures Seasons Seasoning Blend, Garlic Powder, Onion Powder, and Black Pepper to the chicken, and continue to sauté until well blended.
Now, add the soy sauce and half of a lemon squeeze, then stir again for a few seconds. Remove from heat and set aside.
STEP 5: In a large heated fry pan or saute’ pan, add 1 TBSP of olive oil and heat on medium heat for one minute.
Sauté carrots, zucchini, bell pepper, cabbage, sugar snap peas, and celery for 5 minutes on medium heat.
STEP 6: Add the chicken, pancit, and chicken broth into the vegetable mixture and mix well. If at this point, the mixture becomes dry, you may add more broth. Cover, continue to simmer for 15 minutes so that the flavors can savor.
Remove from heat, uncover and squeeze the other half of the lemon onto the mixture.
Toss the mixture like you would a salad, and you’re done!
HOW DO I STORE LEFTOVERS?
You can store leftover pancit in a food-safe plastic or glass container with a lid, or you may store it in a plastic baggie. Store in the refrigerator for up to 3 days.
HOW DO I HEAT UP FILIPINO BIHON PANCIT?
Microwave: Straight from the refrigerator, place the pancit onto a microwave-safe dish, cover with a wet/damp paper towel, and microwave for 1 minute and 30 seconds, or to your desired temperature.
CAN I FREEZE THIS MEAL?
Absolutely, Yes! You can freeze Filipino Bihon Pancit and have it again for future meals. Place the pancit in a freezer-safe container or freezer-safe baggie and freeze up to 4 months.
To thaw frozen pancit, remove from the freezer and place it in the refrigerator overnight. See the above for heating instructions.

Filipino Bihon Pancit with Chicken
Ingredients
- Large Thinly sliced Boneless Chicken Breast

Instructions
- Prep and chop all of the vegetables. Set aside.
- Fill a medium saucepan halfway with water and bring to a soft boil.
- Place pancit noodles into the soft boiling water. Break up noodles until noodles are tender.
- Remove from heat, drain and set aside.
- Heat a large saute' pan or frying pan to medium-high heat.
- Add 1 TBSP of oil and heat one minute.
- Add onions and garlic. Saute' until onions are translucent for about 3 minutes.
- Add chicken and stir. Cook chicken until the chicken is no longer pink. About 6 to 7 minutes.
- Add Natures Seasons Seasoning Blend, Garlic Powder, Onion Powder and pepper. Mix well.
- Add Soy sauce and the juice from ½ of one lemon. Mix well. Set aside.
- Add 1 TBSP of olive oil to a large frypan or saute pan, heat for one minute.
- Add vegetables to the heated pan and stir fry for 5-6 minutes.
- Add 2 cups of chicken broth, pancit, and chicken to the vegetables. Mix well. Add more broth if necessary.
- Cover and simmer for 15 minutes.
- Remove from heat. Squeeze the other half of the lemon juice into the vegetables, mix and serve.
- Enjoy!
