Instructions
Prep and chop all of the vegetables. Set aside.
Fill a medium saucepan halfway with water and bring to a soft boil.
Place pancit noodles into the soft boiling water. Break up noodles until noodles are tender.
Remove from heat, drain and set aside.
Heat a large saute' pan or frying pan to medium-high heat.
Add 1 TBSP of oil and heat one minute.
Add onions and garlic. Saute' until onions are translucent for about 3 minutes.
Add chicken and stir. Cook chicken until the chicken is no longer pink. About 6 to 7 minutes.
Add Natures Seasons Seasoning Blend, Garlic Powder, Onion Powder and pepper. Mix well.
Add Soy sauce and the juice from ½ of one lemon. Mix well. Set aside.
Add 1 TBSP of olive oil to a large frypan or saute pan, heat for one minute.
Add vegetables to the heated pan and stir fry for 5-6 minutes.
Add 2 cups of chicken broth, pancit, and chicken to the vegetables. Mix well. Add more broth if necessary.
Cover and simmer for 15 minutes.
Remove from heat. Squeeze the other half of the lemon juice into the vegetables, mix and serve.
