Ingredients

Jiffy Corn Muffin Mix
1

Chopped Turkey Sausage

Diced Yellow Onion

Chopped or Diced Zucchini

4 oz
Can green chilies

TBSP
Olive Oil

Egg

Cup
Milk
¼
tsp
Coarse Black Pepper
Cheese
Optional / Topping
Instructions
Heat large skillet on medium heat, about 1 minute.
Add olive oil to pan.
Add onions and saute' until onion is translucent, about five minutes.
Add Turkey, stir and continue cooking another 5 minutes.
Add pepper and stir.
Remove from heat and set aside.
Heat oven to 400 degrees.
Grease baking dish or iron skillet well
Pour Jiffy Corn Muffin Mix into a large bowl.
Add eggs, green chilies and milk, then stir. [it will be lumpy, do not over mix]
Pour cooked mixture of sausage into the batter and fold until mixed thoroughly.
Pour batter into pan or skillet.
Place in oven for 40 minutes or until golden brown.
Remove from oven and top with cheese and pepper. [optional]
