I’m a huge fan of cornbread! There are so many creative ways to turn basic cornbread into a delightful dinner. This turkey sausage and zucchini cornbread dish is an example. There was nothing to it!
You can make this simple turkey sausage and zucchini cornbread as a meal, or a side dish. It only takes a few minutes to whip everything together, however, it takes about 40 minutes to bake, and so worth it.
Additionally, if your week is going to be a busy one, you can double up the recipe, and have a quick meal on the go for those busy workdays.
You can refrigerate half of the cooked dish and freeze the rest for future meals or sides.
Literally, you can grab it out of the freezer, thaw, and pop in the microwave for 30 seconds to a minute, and you’ve got a delicious homemade almost-instant mini-meal.
Ingredients
- 1 Box Jiffy Corn Muffin Mix
- 1 Link Chopped Turkey Sausage
- 1 Small Diced Yellow Onion
- 1 Large Chopped or Diced Zucchini
- 1 4 oz Can green chilies
- 1 TBSP Olive Oil
- 1 Egg
- ⅓ Cup Milk
- ¼ tsp Coarse Black Pepper
- Cheese Optional / Topping

STEP 1: Gather all of your ingredients.
STEP: 2. Prep your sausage, onion, and zucchini.
In a skillet heated on medium, add the olive oil and onions and saute’ for about 5 minutes. Continue to Saute’ them until the onions are translucent.
STEP 4: Add the turkey sausage to the skillet and mix well another 5 minutes.

STEP 5: Add the zucchini and pepper, mix for a few minutes. Remove from heat and set aside. Preheat the oven to 400 degrees F.
Step 6: In a medium to a large mixing bowl, add the Jiffy Corn Muffin mix.
Step 7: Add the egg and milk, then stir.
STEP 8: The batter will look like this. [it will be lumpy, do not over mix]

STEP 9: Pour the cooked mixture of sausage into the batter and fold until mixed thoroughly.
STEP 10: Add the green chilies to the mixture and stir.
STEP 11: Grease your muffin pan or iron skillet, generously.
STEP 12: Pour batter into muffin pan or iron skillet. Place in the oven for 40 minutes, or until golden brown. Enjoy!
The edges of this simple turkey sausage zucchini cornbread have a slight crunch around the edges, which I truly love. The inside is not soggy or too dry, it’s just right.
HOW DO YOU REHEAT THE CORNBREAD?
MICROWAVE: I recommend warming it up in the microwave. Place a piece of the cornbread meal on a plate and place a wet/damp paper towel over the top. Microwave for 20-30 seconds. Top with butter, cheese, and black pepper.
OVEN: Place in a heated oven at 300 degrees F. oven for 10 minutes, or longer for the desired temperature.
For ultimate flavor, serve this with or without the cheese. I like to put butter, cheese, and top with black pepper. YUM!
CAN YOU FREEZE THE CORNBREAD?
You can freeze the cornbread for up to 3 months. I don’t recommend it, it is more delicious right from the oven.
From the freezer, thaw in the refrigerator. To heat; place the cornbread meal on a microwave-safe dish and pop in the microwave for 30 seconds to a minute to warm it up.

- Grease baking dish or iron skillet well
- Pour Jiffy Corn Muffin Mix into a large bowl.
- Add eggs, green chilies and milk, then stir. [it will be lumpy, do not over mix]
- Pour cooked mixture of sausage into the batter and fold until mixed thoroughly.
- Pour batter into pan or skillet.
- Place in oven for 40 minutes or until golden brown.
- Remove from oven and top with cheese and pepper. [optional]
